Bistecca alla Fiorentina

Seems our barbecue may have been invented in Florence--I had a (delicious) cut of beef yesterday across from the church of Santa Croce, and it arrived grilled on the outside, and red red red in the middle--as I like it, but harder and harder to find in the States because of food preparation laws.
